Cutlet

Another one of my mum's recipes that is easy to make and wildly popular with guests when entertaining.



What you'll need..
  • 2 Large boiled potatoes
  • 1/2 Cup mixed green peas, carrot (cut into bits) and corn
  • 2-3 Green chillies chopped
  • 2 Tbsp chopped cilantro leaves
  • 1/2 Tsp cumin seeds
  • 1/4 Tsp chilli powder
  • 1/4 Cup semolina
  • 1/2 Cup bread crumbs. I make mine at home by grinding left over slices of bread in the blender
  • Oil for  frying
  • Salt to taste
How to..
  • Peel and mash the boiled potatoes in a large mixing bowl. 
  • Add bread crumbs, mixed veggies, green chillies, cilantro, cumin seeds and chilli powder to the mashed potatoes.
  • Mix well till they all bind together.
  • Rub couple drops of oil in the palm of your hands and grab a small ball of potato. Shape them into little round cutlets.
  • Place the semolina in a small bowl and dip the raw cutlets into it till all sides are coated. 
  • Heat oil in a frying pan and carefully slide the cutlets into the hot oil. Flip them a couple time till they are brown and crispy. Serve hot with ketchup and cilantro chutney.
