This is my goto recipe when I need to get dinner ready in a hurry. In our family, it is famously known as yellow rice.

- 1 Cup basmati rice
- 1 Small potato cut in small pieces
- 1 Medium tomato chopped
- 2 Tsp chopped garlic
- 1 Green chilli chopped
- 1/2 Tsp mustard seeds
- 1/2 Tsp cumin seeds
- 1/4 Tsp turmeric powder
- 1/2 Tsp dry mango powder
- 1 Tsp chilli powder
- 1 Tsp coriander powder
- 2 Tbsp cilantro leaves chopped
- 2 Tbsp oil
- Salt to taste
How to..
- Cook the rice with salt and allow it to cool. Also works great with any left over plain rice you might have in your fridge.
- Heat oil in a pan. Add mustard and cumin seeds and wait for them to splutter.
- Add garlic and cook for 12-15 seconds till the garlic gets fragrant.
- Then add the potatoes and mix well. Cook on high heat for 2 minutes, stirring frequently and then cover with a lid and cook on medium heat for 3-4 minutes.
- Add the chopped tomatoes, green chillies, salt, turmeric, coriander, chilli and dry mango powder and mix well. Cover and cook till the tomatoes get mushy.
- Add cooked rice and cilantro leaves. Mix well and serve hot with papad and raita.
