Masala Beans with Fenugreek

This recipe is adapted from "Best Ever Indian Cookbook" by Baljekar, Fernandez, Husain & Kanani. It is really delicious and one of my favorite green bean dishes.


What you'll need..
  • 1 and 1/2 cups french cut green beans, blanched
  • 1 medium tomato, chopped
  • 1 small onion cut lengthwise
  • 1/4 Tsp turmeric powder
  • 1 Tsp cumin powder
  • 1 Tsp coriander powder
  • 1 Tsp chilli powder
  • 1 Tsp chopped garlic
  • 1 Tsp sesame seeds
  • 1/2 Tbsp dried methi leaves (Kasoori Methi)
  • 2 Tbsp chopped cilantro leaves
  • 1 Tbsp lemon juice
  • 2 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan.
  • Add garlic and cook for 12-15 seconds till it gets fragrant.
  • Add onions and cook till it gets translucent.
  • Now add the chopped tomato, salt, turmeric, cumin, coriander and chilli powders. Cover and cook on medium heat till the tomatoes get mushy.
  • Then add the dried methi leaves and sesame seeds. Mix well and cook for another 2-3 minutes. 
  • Add the blanched beans to this and mix well. Cover and cook for 4-5 minutes till the beans absorb all the flavors.
  • Mix in chopped cilantro leaves and lemon juice and serve hot.
