Spicy Oven Roasted Eggplant

This easy eggplant dish is coated with spices and roasted in the oven for a crispy texture.



What you'll need..
  • 2 Chinese eggplant, cut into round slices
  • 1 Small onion, finely chopped
  • 2 Garlic pods, finely chopped
  • 2 and 1/2 Tbsp oil
  • 1/4 Tsp turmeric powder
  • 1 Tsp chilli powder
  • 1 Tsp coriander powder
  • 1 Tsp sabji masala
  • Salt to taste
How to..
  • Preheat oven to 400 degrees Fahrenheit or 200 degrees Celsius.
  • Heat 1 Tbsp of oil in a pan and add the chopped onion and garlic.
  • Cook for 2-3 minutes till the the onion gets pink and the garlic gets fragrant. Remove from heat and set aside.
  • Place the sliced eggplant in a large mixing bowl.
  • Add 1 and 1/2 Tbsp of oil to the eggplant and mix well. 
  • Now add salt, turmeric, chilli, coriander, sabji masala and the cooked onion garlic mixture and mix well till all the eggplant slices are evenly coated with the spices.
  • Place all the eggplant slices on a baking sheet lined with aluminum foil, trying not to overlap.
  • Bake in the oven for 30-35 minutes till the eggplant starts to get brown and crispy. Serve hot once done.
