Cauliflower Thoran

This cauliflower and potato dish, prepared with roasted coconut is another one of my grandmother's recipes. Great with rice and yogurt curry or any of your favorite south Indian curries.



What you'll need..
  • 1 Medium potato, cut into chunks
  • 3 Cups cauliflower florets
  • 1/2 Cup grated or finely chopped coconut
  • 1/4 Tsp turmeric powder
  • 1/2 Tsp chilli powder
  • 1 Tsp coriander powder
  • 12-15 Curry leaves
  • 1/2 Tsp Urad dal (split white lentils)
  • 1/2 Tsp mustard seeds
  • 3 Tbsp Oil
  • Salt to taste
How to..
  • Boil the potatoes and cauliflower in water with salt till they are semi cooked. Drain and set aside.
  • Heat 1 Tbsp oil in a non stick pan. 
  • Add grated coconut and fry till it starts to turn brown in color.
  • Add turmeric, chilli, coriander and 6-8 curry leaves and mix well. Continue to fry for another 1-2 minutes, then remove from heat.
  • Once cooled grind the mixture, without water, into a dry and coarse paste.
  • Add this paste to the cauliflower and potatoes and mix well. 
  • Heat the remaining oil in the same pan and add urad dal, mustard seeds and the remaining curry leaves to it. Wait for the mustard seeds to splutter.
  • Add the cauliflower and potato mixture. Cover with a lid and cook on medium heat for 5-6 minutes, stirring occasionally, till the vegetables are fully cooked. Serve hot.
