This is a quick and zesty salad that goes well as a side dish with meat appetizers like Tandoori chicken.

- 1 Small cucumber, finely chopped
- 1 Small tomato, finely chopped
- 1/2 Small onion, finely chopped
- 1/4 Cup corn (fresh or frozen)
- 1 Green chillies, finely chopped
- 1/2 Tsp dried red chilli flakes
- 1 Tbsp lemon juice
- 2-3 Tbsp cilantro leaves chopped
- 1/2 Tbsp Oil
- 1/4 Cup salted peanuts roughly chopped
- 1/2 Tsp fresh cracked pepper
- 1 Tsp chaat masala
- Salt to taste
How to..
- Mix the chopped cucumber, tomato, onion, corn, green chillies, red chilli flakes, cilantro and lemon juice in a bowl.
- Heat oil in a non stick pan and add the chopped peanuts to it. Fry for about 30 seconds.
- Add the black pepper and chaat masala and fry for another minute.
- Remove from heat and add to the mixture in the bowl. Mix well.
- Add additional salt, if needed, just before serving. Mix well and serve.
