Kachumber

This is a quick and zesty salad that goes well as a side dish with meat appetizers like Tandoori chicken.


What you'll need..
  • 1 Small cucumber, finely chopped
  • 1 Small tomato, finely chopped
  • 1/2 Small onion, finely chopped
  • 1/4 Cup corn (fresh or frozen)
  • 1 Green chillies, finely chopped
  • 1/2 Tsp dried red chilli flakes
  • 1 Tbsp lemon juice
  • 2-3 Tbsp cilantro leaves chopped
  • 1/2 Tbsp Oil
  • 1/4 Cup salted peanuts roughly chopped
  • 1/2 Tsp fresh cracked pepper
  • 1 Tsp chaat masala
  • Salt to taste
How to..
  • Mix the chopped cucumber, tomato, onion, corn, green chillies, red chilli flakes, cilantro and lemon juice in a bowl.
  • Heat oil in a non stick pan and add the chopped peanuts to it. Fry for about 30 seconds. 
  • Add the black pepper and chaat masala and fry for another minute.
  • Remove from heat and add to the mixture in the bowl. Mix well.
  • Add additional salt, if needed, just before serving. Mix well and serve.
