This spicy potato recipe is ready in minutes and perfect for when you are in a hurry. This is my goto recipe when its the end of the week and there is a shortage of vegetables in my fridge.

- 2 Medium boiled potatoes, peeled and cut into chunks
- 1/2 Tsp mustard seeds
- 1/2 Tsp cumin seeds
- 1/2 Tsp coriander seeds
- 1/2 Tsp urad dal (Split white beans)
- 6-8 Curry leaves
- 2 Dried red chillies
- 1/4 Tsp turmeric powder
- 1 Tsp chilli powder
- 1 Tsp coriander powder
- 2 Tbsp cilantro leaves chopped
- 3 Tbsp Oil
- Salt to taste
How to..
- Heat oil in a non stick pan. Add the mustard seeds, cumin seeds, coriander seeds and urad dal and wait for them to splutter.
- Add the curry leaves and dried red chillies and fry for about 30 seconds.
- Add turmeric, chilli powder and coriander powder to the oil and then add the potatoes and salt. Mix well till the potatoes are coated with the spices.
- Garnish with chopped cilantro leaves. Serve hot.
