Masala Potatoes

This spicy potato recipe is ready in minutes and perfect for when you are in a hurry. This is my goto recipe when its the end of the week and there is a shortage of vegetables in my fridge.



What you'll need..
  • 2 Medium boiled potatoes, peeled and cut into chunks
  • 1/2 Tsp mustard seeds
  • 1/2 Tsp cumin seeds
  • 1/2 Tsp coriander seeds
  • 1/2 Tsp urad dal (Split white beans)
  • 6-8 Curry leaves
  • 2 Dried red chillies
  • 1/4 Tsp turmeric powder
  • 1 Tsp chilli powder
  • 1 Tsp coriander powder
  • 2 Tbsp cilantro leaves chopped
  • 3 Tbsp Oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan. Add the mustard seeds, cumin seeds, coriander seeds and urad dal and wait for them to splutter.
  • Add the curry leaves and dried red chillies and fry for about 30 seconds.
  • Add turmeric, chilli powder and coriander powder to the oil and then add the potatoes and salt. Mix well till the potatoes are coated with the spices.
  • Garnish with chopped cilantro leaves. Serve hot.
