This popular Indo-Chinese dish is wonderful combination of noodles tossed with stir fried vegetables and sauces. The perfect side for my favorites like Veg manchurian, Gobi manchurian or Chilli chicken.

- 225 gm egg noodles (Half pack)
- 1/2 Cup julienned carrots
- 1/2 Cup corn
- 1/2 Cup beans, french cut
- 1/2 Cup green bell pepper, cut into pieces
- 1/2 Cup cabbage, shredded
- 2 Green onions, sliced into rounds
- 1 Tbsp ginger-garlic-chilli paste
- 2 Tbsp soya sauce
- 2 Tbsp vinegar
- 2 Tbsp chilli sauce
- 1/2 Tsp fresh cracked pepper
- 1 Tbsp Ajinomoto/Msg (Optional)
- 3 Tbsp oil
- Salt to taste
How to..
- Boil the egg noodles in water with salt for 4-5 minutes (or as per the package suggestion). Drain the hot water and then rinse the noodles with cold water. Drain again and set aside.
- Add soya sauce, vinegar, chilli sauce and 1 Tbsp oil to the noodles and mix well.
- Heat the remaining oil in a large wok.
- Add the ginger-garlic-chilli paste and fry for 30 seconds.
- Add all the vegetables, except green onions and stir fry on high heat for 3-4 minutes, stirring constantly.
- Add salt, pepper and ajinomoto and mix well.
- Add noodles and green onions and mix well. Serve hot.
