Veg Hakka Noodles

This popular Indo-Chinese dish is wonderful combination of noodles tossed with stir fried vegetables and sauces. The perfect side for my favorites like Veg manchurian, Gobi manchurian or Chilli chicken



What you'll need..
  • 225 gm egg noodles (Half pack)
  • 1/2 Cup julienned carrots
  • 1/2 Cup corn
  • 1/2 Cup beans, french cut
  • 1/2 Cup green bell pepper, cut into pieces
  • 1/2 Cup cabbage, shredded
  • 2 Green onions, sliced into rounds
  • 1 Tbsp ginger-garlic-chilli paste
  • 2 Tbsp soya sauce
  • 2 Tbsp vinegar
  • 2 Tbsp chilli sauce
  • 1/2 Tsp fresh cracked pepper
  • 1 Tbsp Ajinomoto/Msg (Optional)
  • 3 Tbsp oil
  • Salt to taste
How to..
  • Boil the egg noodles in water with salt for 4-5 minutes (or as per the package suggestion). Drain the hot water and then rinse the noodles with cold water. Drain again and set aside. 
  • Add soya sauce, vinegar, chilli sauce and 1 Tbsp oil to the noodles and mix well.
  • Heat the remaining oil in a large wok. 
  • Add the ginger-garlic-chilli paste and fry for 30 seconds. 
  • Add all the vegetables, except green onions and stir fry on high heat for 3-4 minutes, stirring constantly. 
  • Add salt, pepper and ajinomoto and mix well. 
  • Add noodles and green onions and mix well. Serve hot.
