Curly Pasta in Marinara Sauce

This is one of my favorite pasta dishes not only because it is hearty and tastes great but also because it is the easiest to make.



What you'll need..
  • 1 and 1/2 cups curly pasta (or any of your favorite kind)
  • 1 cup vegetables (I use chopped green bell peppers, onions, celery, spinach, carrots and corn)
  • 300 ml or about 1/2 bottle of marinara sauce (store bought, your favorite brand)
  • 2 Tbsp olive oil
  • 1/2 Tsp fresh cracked black pepper
  • 1/2 Tsp red chilli flakes
  • 1 Tsp chopped garlic
  • 1/2 Tbsp balsamic vinegar
  • 2 Tbsp chopped cilantro leaves
  • Salt to taste
How to..
  • Cook the pasta with salt as per the instructions on the package.
  • Heat oil in a large non stick flat pan.
  • Add the garlic and cook for about 30 seconds till it gets fragrant.
  • Add the onions and cook till they get translucent.
  • Then add the remaining vegetables, salt, pepper, chilli flakes, balsamic vinegar and cook on high heat for about 3-4 minutes so the veggies are cooked but still crisp.
  • Now add the marinara sauce and mix well. When it starts to bubble, add the pasta and chopped cilantro leaves. Mix well and serve hot.
