Bharwa Shimla Mirch

This is my mum's recipe and one of my favorite dishes. Everyone who has tried it absolutely loves it.



What you'll need..
  • 2 Green bell peppers
  • 3 Medium potatoes, boiled
  • 1 Tsp Mustard seeds
  • 1/4 Tsp turmeric powder
  • 1 Tsp chilli powder
  • 1 Tsp garam masala
  • 1 Tsp Amchoor (Dried mango powder)
  • 2-3 Green chillies chopped
  • 2 Tbsp cilantro leaves chopped
  • 2 Tbsp oil
  • Salt to taste
How to..
  • Preheat oven to 400 degrees Fahrenheit or 200 degrees Celsius.
  • Cut the tops off the bell peppers and with a spoon empty out the insides. Discard all the seeds.
  • Rub a little salt on the inside of the bell pepper and set aside.
  • Peel the boiled potatoes and mash them roughly.
  • Heat oil in a non stick pan and add the mustard seeds to it. Wait for them to splutter.
  • Add the chopped green chillies and fry for 12-15 seconds.
  • Now add the mashed potatoes, salt, turmeric, chilli powder, garam masala, amchoor and cilantro leaves and mix well. Cook for 3-4 minutes till the potatoes are blended well with the spices.
  • Brush the outside and inside of the bell peppers with some oil.
  • Remove the potatoes from heat and stuff them into the bell peppers.
  • Place the bell peppers onto a baking sheet lined with aluminum foil and put them inside the oven. 
  • Bake for 30-35 minutes till the outer skin of the bell peppers start to brown and wrinkle and the potatoes get crisp on top. Serve hot with roti.
