Ragda Patties

This is a very popular and one of my favorite Indian street food. It is a delicious and filling combination of two items, Aloo tikki and Ragda, both of which can also be enjoyed on their own.

What you'll need..
  • Aloo Tikkis
  • 1 Can chickpeas (or dried white/green peas soaked over night and boiled)
  • 1 Medium onion chopped
  • 1 Large tomato chopped
  • 1 Tbsp ginger-garlic-green chilli paste
  • 1/2 Tsp turmeric powder
  • 1 Tsp chilli powder
  • 1 Tsp coriander powder
  • 1 Tsp cumin powder
  • 1 Tsp garam masala
  • 1/4 Cup tamarind juice
  • 1 Tbsp cilantro leaves chopped
  • 1 Tbsp Nylon Sev
  • 2 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan.
  • Add the ginger garlic chilli paste and fry for 12-15 seconds till it gets fragrant.
  • Add the chopped onions and fry for 4-5 minutes till the onions get translucent.
  • Now add the tomatoes, turmeric, chilli powder, coriander powder, cumin powder, garam masala and salt and mix well.
  • Cover with a lid and cook on medium heat till the tomatoes get mushy.
  • Add the canned chickpeas and tamarind juice and mix well. Cover and cook on low heat for 8-10 minutes. Mash some of the chickpeas with a potato masher to make the gravy thicker.
  • Serve hot with the prepared Aloo tikki. Garnish with cilantro leaves, some chopped onion, cilantro chutney, tamarind chutney and nylon sev.
