This is one of my favorite pasta dishes not only because it is hearty and tastes great but also because it is the easiest to make.

- 1 and 1/2 cups curly pasta (or any of your favorite kind)
- 1 cup vegetables (I use chopped green bell peppers, onions, celery, spinach, carrots and corn)
- 300 ml or about 1/2 bottle of marinara sauce (store bought, your favorite brand)
- 2 Tbsp olive oil
- 1/2 Tsp fresh cracked black pepper
- 1/2 Tsp red chilli flakes
- 1 Tsp chopped garlic
- 1/2 Tbsp balsamic vinegar
- 2 Tbsp chopped cilantro leaves
- Salt to taste
How to..
- Cook the pasta with salt as per the instructions on the package.
- Heat oil in a large non stick flat pan.
- Add the garlic and cook for about 30 seconds till it gets fragrant.
- Add the onions and cook till they get translucent.
- Then add the remaining vegetables, salt, pepper, chilli flakes, balsamic vinegar and cook on high heat for about 3-4 minutes so the veggies are cooked but still crisp.
- Now add the marinara sauce and mix well. When it starts to bubble, add the pasta and chopped cilantro leaves. Mix well and serve hot.
