This is a very easy, almost fool proof, egg recipe that is delicious, nutritious and can be prepared in minutes.
What you'll need..
- 3 Large eggs
- 1-2 Green chillies
- 1 Small onion, finely chopped
- 1 Small tomato, finely chopped
- 2 Tbsp oil
- ¼ Tsp turmeric powder
- ¼ Tsp pepper powder
- ½ Tsp chilli powder
- 2 Tbsp cilantro leaves chopped
- Salt to taste
How to..
- Heat oil in a non stick pan.
- Add the chopped onions and cook for 3-5 mins till the onions turn translucent.
- Then add the chopped tomatoes and chillies. Also add salt, turmeric, chilli and pepper powder.
- Mix well and cook on medium heat for 5 mins till the tomatoes get cooked and turn mushy.
- Now crack the 3 eggs into the pan and mix them with the onions and tomatoes.
- Cook the eggs on a higher heat, mixing constantly till the eggs get cooked and start binding.
- Once done, mix in the chopped cilantro leaves. Serve hot, with roti.
