Grilled Chicken Skewers

My mum and I make this when we are entertaining because it is so easy and effortless and a hit with everyone who eats it.


What you'll need..
  • 4-5 Skinless, boneless chicken thighs- cut into small cubes
  • 2 Tsp ginger, garlic and green chilli paste. (I just chop up mine in the grinder with a few drops of water)
  • 1 Tbsp olive oil
  • 2 Tbsp yogurt
  • 1 Tsp chilli powder
  • 1 Tsp coriander powder
  • 1 Tsp garam masala powder
  • ½ Tsp turmeric powder
  • 1/2 Tbsp cilantro and mint leaf paste
  • 2 Tbsp lemon juice
  • 1 Medium onion cut into big chunks, and its layers separated
  • Wooden skewers soaked in water for about 20 minutes 
  • Salt to taste
How to..
  • In a large mixing bowl, whip together yogurt, lemon juice, olive oil, salt, ginger-garlic-chilli paste, cilantro and mint leaf paste, chilli, coriander, garam masala, and turmeric powder.
  • Add the chicken cubes to this mixture and mix well. Poke the chicken cubes with a fork.
  • Now in a zip lock bag or a non metallic bowl, let this marinate in the fridge for 1-2 hours. The longer the better. It will help make the chicken pieces tender.
  • Wipe the damp skewers with a paper towel. Add alternate pieces of onions and chicken. You could also use green bell pepper pieces. 
  • Grill the skewers either on an outdoor grill, an indoor non stick grill pan or a heavy base non stick pan. 
  • Rotate and cook each side for 4-5 minutes. Chicken that's been marinated for a few hours will cook fast. 
  • Once done, squeeze some lemon juice on top and serve hot.
