This is my absolute favorite dal to have with roti. Really easy to make, the tadka gives it a good punch of flavor.

- 1/2 Cup moong dal (Split yellow moong beans) This same recipe can also be made using chana dal.
- 1 Medium tomato chopped
- 1-2 Green chillies chopped
- 1/2 Small onion chopped
- 1/4 Tsp turmeric powder
- 1/2 Tsp chilli powder
- 1/2 Tsp corriander powder
- 1/2 Tsp dry mango powder
- 1/2 Tsp cumin seeds
- 1/2 Tsp mustard seeds
- 2 Tbsp oil
- 1 Tbsp lemon juice
- 1 Tbsp chopped cilantro leaves
- Boil the moong dal, tomato and green chilli till the dal is well cooked.
- Heat 1 tbsp of oil in a pan and add mustard seeds to it. Wait for it to splutter.
- Add the boiled dal to the pan carefully coz it will sizzle.
- Then add turmeric and salt, mix well and cover with a lid. If the dal is too thick, add a little water. Cover and cook for 5-8 minutes.
- Remove the dal from heat into the serving dish.
- Mix together the chilli, coriander and dry mango powders and sprinkle all over the dal.
- In a separate pan, heat 1 tbsp of oil. Add the cumin seeds to it and wait for it to splutter. Remove the pan from heat and with a spoon, pour the hot oil evenly over the dry spices on the dal.
- Garnish with chopped onions, cilantro and lemon juice. Serve hot.
