Onion Bhajiya

This is a crowd pleaser. Serve it at a gathering and the plates will be empty in minutes. A quick appetizer and my absolute favorite dish to eat on a cold, gloomy day.


What you'll need..
  • 1 Large onion cut in half and sliced thinly, lengthwise
  • 1/2 Tsp cumin seeds
  • 1/2 Tsp coriander seeds
  • 1-2 Green chillies chopped
  • 2 Tbsp cilantro leaves chopped
  • 1/2 chilli powder
  • 1/2 Cup gram flour (Besan) (More or less, as needed)
  • Salt to taste
  • Oil for frying
How to..
  • In a large mixing bowl, mix together onions, cumin and coriander seeds, green chillies, cilantro leaves, chilli powder and salt.
  • Now add gram flour and water, a little at a time and mixing constantly. The batter should not be thick or runny. It should be just enough to coat the onions and hold them together in a cluster.
  • Heat oil in a frying pan. Add uneven cluster of onions into the hot oil. Fry on high heat initially and then on medium. This helps make them crisp without burning them.
  • They are done when they turn brown and crispy. Remove them from the pan and place them on paper towels to drain any excess oil. 
  • Serve hot with ketchup and cilantro chutney.
