Another easy recipe for breakfast, rich in ginger flavor and ready in minutes.

- 2 Cups semiya (Rice noodle, broken down)
- 1 Cup mixed peas, carrots and corn (fresh or frozen)
- 1 Heaping Tbsp chopped ginger
- 1 Tsp mustard seeds
- 1/2 Tsp urad dal (split white beans)
- 6-8 Curry leaves
- 2 Dried red chillies
- 2-3 Green chillies finely chopped
- 2 Tbsp oil
- Salt to taste
How to..
- Soak the rice noodles in a bowl of hot water for about 15 minutes. Generally, rice noodles don't require boiling, this should be enough to cook them.
- Heat oil in a non stick pan. Add mustard seeds and urad dal and wait for them to splutter.
- Add the curry leaves and dried red chillies and fry for about a minute.
- Now add the chopped ginger and green chillies and cook for another minute.
- Add the peas, carrots, corn and salt and mix well. Cook for 2-3 minutes
- Drain the rice noodles and add them to the vegetables. Mix well and serve hot with coconut chutney.
