This is one of our staple breakfast dishes. It is quick to make and therefore perfect for the lazy, sleep-in weekend.

- 1 Small potato, cut into small pieces
- 1 Small onion chopped
- 1 Medium tomato chopped
- 1-2 Green chillies chopped
- 1/2 Tsp mustard seeds
- 1/4 Tsp turmeric powder
- 3/4 Tsp chilli powder
- 1 Cup roasted semolina (Rava/Suji)
- 2 Tbsp oil
- 2 Tbsp chopped cilantro leaves
- Salt to taste
How to..
- Heat oil in a non stick pan.
- Add the mustard seeds and wait for it to splutter.
- Add the chopped potatoes and cook for 3-4 minutes stirring frequently.
- Then add the onions and cook for another 3-4 minutes till they get pink.
- Now add the chopped tomatoes, green chillies, turmeric, chilli powder and salt. Mix well.
- Cover with a lid and cook on medium heat till the tomatoes get mushy.
- Add about a cup of water into the cooked vegetables on high heat, and when it starts to bubble add the roasted semolina.
- Mix constantly for 2-3 minutes till the water gets absorbed and the upma is not runny anymore.
- Garnish with cilantro leaves and serve hot.
