Spinach in Coconut Curry

Another one of my grandmother's recipes. Quick and easy and one of my favorite coconut curries. 



What you'll need..
  • 1/2 Cup toor dal (Split pigeon peas)
  • 4 Cups chopped spinach
  • 1/2 Heaping cup grated coconut
  • 1 Inch piece of onion
  • 2 Tsp cumin seeds
  • 1 Tsp mustard seeds
  • 2-3 Dried red chillies
  • 1/4 Tsp turmeric powder
  • 1/2 Tsp chilli powder
  • 2 Tbsp oil
  • Salt to taste
How to..
  • Cook toor dal along with the chopped spinach in a pressure cooker along with 2 and 1/2 cups of water. Cook on high heat till you hear the first whistle and then simmer on low for 15 minutes.
  • Grind together coconut, onion, 1 Tsp cumin seeds, turmeric and chilli powder into a smooth paste.
  • Once the pressure cooker has cooled down and all the steam has escaped, open the lid and add the coconut paste and salt to the dal and spinach mixture. Mix well and bring to a boil.
  • Heat oil in a pan and add mustard and cumin seeds to it. Wait for it to splutter.
  • Now add the dried red chillies and fry for 1-2 minutes.
  • Carefully pour the hot oil concoction over the curry and mix well. Serve hot.
