Brown Rice

This is my mum's recipe and I guess we call this brown rice because of the brown color it gets from the caramelized onions. We make this rice when we're having Sai Bhaji and the combination is delicious!



What you'll need..
  • 2-3 Bay leaves
  • 2 Inch piece of cinnamon
  • 1/2 Cup peas
  • 1 Medium onion cut in half and thinly sliced
  • 1 Medium tomato chopped
  • 1-2 Green chillies chopped
  • 1 Tsp coriander powder
  • 1/2 Tsp chilli powder
  • 1 Cup basmati rice
  • 2 Tbsp cilantro leaves chopped
  • 2 Tbsp oil
  • Salt to taste
How to..
  • In a bowl soak rice in water and set aside.
  • Heat oil in a non stick pot. Add bay leaves and cinnamon and fry for 10-12 seconds
  • Add onions and fry till they turn brown in color stirring frequently.
  • Add the chopped tomatoes, peas, green chilli, coriander, chilli powder and salt. Mix well. 
  • Cover with a lid and cook for 3-4 minutes till the tomatoes get mushy.
  • Discard the soaking water and add the rice to the vegetables. Mix well.
  • Now add 1 and 1/2 cups of water and bring to a boil.When most of the water on the surface has evaporated, cover with a lid and continue cooking on low heat for 4-5 minutes.
  • Mix in cilantro leaves and serve hot.
