Aloo Bhindi

Potatoes and okra are a great combination and here's an easy, everyday recipe for it. 



What you'll need..
  • 300 gm chopped bhindi, fresh or frozen (Okra)
  • 1 Medium potato, cut into pieces
  • 1/4 Tsp turmeric powder
  • 1/2 Tsp chilli powder
  • 1/2 Tsp garam masala
  • 1 Tsp coriander powder
  • 1/2 Tsp mustard seeds
  • 1/2 Tsp cumin seeds
  • 2 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan. Add the mustard and cumin seeds to it and wait for them to splutter.
  • Add the okra and potatoes, mix well and then cover with a lid and cook on high heat for 6-8 minutes, stirring occasionally. Don't worry about the sliminess, it disappears as the okra cooks.
  • Add salt, turmeric, chilli, garam masala, and coriander powder and mix well. 
  • Continue to cook without the lid for 8-10 minutes, stirring occasionally, till the potatoes are well done. Serve hot.
