Grilled Cheese and Jalapeno Sandwich

This is an ooey gooey sandwich in a hurry with the richness of melted cheese and a kick of heat from the jalapenos.


What you'll need..
  • 4 Slices bread
  • 2 Jalapeno
  • 1/2 Cup shredded cheddar cheese
  • 1 Small onion thinly sliced
  • 1/2 Tbsp Oil
  • Butter/Margarine
  • Salt to taste
How to..
  • Cut the jalapenos in half, lengthwise, remove all the seeds and rinse. Leave some of the seeds in if you want more heat.
  • Apply butter/margarine to one side of each slice of bread. 
  • Heat a non stick pan, no oil, and add the jalapenos to it. Cover with a lid and roast on high heat for 5 minutes, tossing frequently till the jalapenos get a little tender and charred. Remove from heat and set aside.
  • Now add oil and sliced onions to the same pan. Fry for 3-4 minutes, stirring constantly, till the onions get caramelized. Remove from heat, add a pinch of salt and set aside.
  • Sandwich the fried onions, roasted jalapeno and shredded cheese between 2 non buttered sides of bread. 
  • Add this to the same pan and fry on medium heat till the bread gets golden brown and crispy on both sides. Serve hot.
