Mushrooms and Corn

I like eating mushrooms. They are easy to make, taste good and are good for you. I recently found this recipe in "My Indian Kitchen" by Hari Nayak and it turned out yummy.. so here's the recipe.



What you'll need..
  • 250 gm Button mushroom, cut in half or in thick slices
  • 1 Cup corn
  • 1 Medium onion, finely chopped
  • 2 Medium tomatoes, chopped
  • 1 Tbsp ginger-garlic- chilli paste
  • 1 Tsp chilli powder
  • 1/2 Tsp garam masala
  • 1 Tbsp cilantro leaves chopped
  • 3 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan.
  • Add the ginger-garlic-chilli paste and fry for about 12-15 seconds.
  • Add the chopped onions and mix well. Fry for 4-5 minutes till the onion turns golden brown.
  • Add chilli powder, mix well and then add 1/4 cup of water. Cook for about 30 seconds.
  • Add chopped tomatoes and mix well. Cook on high heat till the tomatoes get mushy. Now mash them with a potato masher and cook for another 2-3 minutes.
  • Add mushrooms, corn and salt and mix well. Cover with a lid and cook for 3-4 minutes on medium heat.
  • Add garam masala and mix well. Cook without the lid for 2-3 more minutes, garnish with cilantro leaves and serve hot with roti.
