Sai Bhaji

This Sindhi staple is my mum's 'one-pot' recipe for a nutritious, iron rich spinach curry. It tastes so good you have to try it and the best combination for Sai bhaji is this easy Brown Rice recipe.



What you'll need..
  • 4 Cups chopped spinach
  • 1/2 Cup chana dal (Split bengal gram) soaked in water for 20 mins
  • 1 Medium onion chopped
  • 1-2 Green chillies chopped
  • 2 Tbsp chopped dill
  • 1 Tomato chopped
  • 1 Tsp coriander powder
  • 1/2 Tsp turmeric powder
  • 3 Tbsp oil
  • Salt to taste
How to..
  • I make this dish using a pressure cooker. Just helps cut back on cooking time.
  • Heat oil in a pressure cooker. Add the chopped onions and green chillies and fry till the onions turn light brown.
  • Add chopped spinach and dill and mix well. Cook for about a minute.
  • Discard the water and add the soaked chana dal, tomato, salt, coriander powder and turmeric. Mix well.
  • Add one cup water. Cover with a lid and cook on high heat till you hear the first whistle. Then cook on low heat for 20 minutes. 
  • Open the lid once all the steam has cooled. Smash the spinach and dal a few times with a potato masher. If the curry is too thick, add a little water. Serve hot with rice.
