This is a great recipe for bbq season and a scrumptious way to eat your veggies! It is so easy to make and perfect for indoor or outdoor grill. Feel free to use a combination of any of your favorite veggies.

- 6-8 Button mushrooms, cut in half
- 6-8 Baby potatoes, boiled till semi cooked and cut in half
- 1 Medium onion, cut into chunks
- 1 Zucchini, cut into rounds
- Red/ Yellow/ Green peppers, cut into chunks
- Wooden skewers, soaked in water for 20 minutes
- 1/2 Tsp black pepper
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp lemon juice
- 2-3 Garlic pods, finely chopped
- Salt to taste
How to..
- Whisk together in a large bowl olive oil, balsamic vinegar, lemon juice, garlic, fresh cracked black pepper and salt.
- Add all the veggies to this marinade and mix well. Set aside for 15 minutes.
- Wipe the damp skewers with a paper towel and add the veggies to the skewers.
- Grill the skewers either on an outdoor grill or an indoor non stick grill pan.
- Rotate and cook each side for 3-4 minutes. Serve hot.
