Grilled Vegetable Skewers

This is a great recipe for bbq season and a scrumptious way to eat your veggies! It is so easy to make and perfect for indoor or outdoor grill. Feel free to use a combination of any of your favorite veggies. 


What you'll need..
  • 6-8 Button mushrooms, cut in half
  • 6-8 Baby potatoes, boiled till semi cooked and cut in half
  • 1 Medium onion, cut into chunks
  • 1 Zucchini, cut into rounds
  • Red/ Yellow/ Green peppers, cut into chunks
  • Wooden skewers, soaked in water for 20 minutes
  • 1/2 Tsp black pepper
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp lemon juice
  • 2-3 Garlic pods, finely chopped
  • Salt to taste
How to..
  • Whisk together in a large bowl olive oil, balsamic vinegar, lemon juice, garlic, fresh cracked black pepper and salt. 
  • Add all the veggies to this marinade and mix well. Set aside for 15 minutes.
  • Wipe the damp skewers with a paper towel and add the veggies to the skewers.
  • Grill the skewers either on an outdoor grill or an indoor non stick grill pan. 
  • Rotate and cook each side for 3-4 minutes. Serve hot.
