Vegetable Pulao/Pilaf

There are so many ways to make pulao but this recipe is one of my favorites. It is my aunt's recipe with a few modifications by me. 


What you'll need..
  • 1 Cup basmati rice
  • 1/2 Cup carrots, julienned
  • 1/2 Cup green beans, french cut
  • 1/2 Cup peas
  • 1 Cup cauliflower florets
  • 1 Inch piece of cinnamon
  • 2-3 Bay leaves
  • 4-5 Cloves
  • 1/2 Cup cilantro leaves
  • 2-3 Green chillies
  • 1 Inch piece of ginger
  • 3-4 Garlic pods
  • 1/2 Tsp turmeric powder
  • 2 Tbsp oil
  • Salt to taste
How to..
  • In a bowl, soak rice in water and set aside.
  • Grind the ginger, garlic, chillies and cilantro into a fine paste.
  • Heat oil in a non stick pot. Add cinnamon, bay leaves and cloves to it and fry for 12-15 seconds.
  • Add ginger-garlic-chilli and cilantro paste to it and fry for another 15 seconds till the garlic gets fragrant. 
  • Now add carrot, beans, peas, cauliflower, turmeric and salt and mix well. Cook for 4-5 minutes till the vegetables get a little tender.
  • Discard the soaking water and add rice to the vegetables. Mix well.
  • Now add 1 and 1/2 cups of water and additional salt for the rice. Bring to a boil on high heat. 
  • When most of the water on surface has evaporated, mix well, cover with a lid and continue cooking on low heat for 4-5 minutes. Serve hot.
