Potatoes taste great with anything, really! and here is another simple yet great tasting potato and eggplant dish.

- 5-6 Indian eggplant, cut into pieces
- 1 Large potato, cut into pieces
- 1/4 Tsp turmeric powder
- 1/2 Tsp chilli powder
- 1/2 Tsp garam masala (Optional)
- 1 Tsp coriander powder
- 2 Tbsp cilantro leaves, chopped
- 3 Tbsp oil
- Salt to taste
How to..
- Heat oil in a non stick pan. Add the eggplant and potatoes, mix well and then cover with a lid and cook on medium to high heat for 8-10 minutes, stirring occasionally.
- Add salt, turmeric, chilli, garam masala, and coriander powder and mix well.
- Continue to cook without the lid for 8-10 minutes, stirring occasionally, till the potatoes are well done. Garnish with cilantro leaves and serve hot.
