Aloo Baingan

Potatoes taste great with anything, really! and here is another simple yet great tasting potato and eggplant dish.


What you'll need..
  • 5-6 Indian eggplant, cut into pieces
  • 1 Large potato, cut into pieces
  • 1/4 Tsp turmeric powder
  • 1/2 Tsp chilli powder
  • 1/2 Tsp garam masala (Optional)
  • 1 Tsp coriander powder
  • 2 Tbsp cilantro leaves, chopped
  • 3 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a non stick pan. Add the eggplant and potatoes, mix well and then cover with a lid and cook on medium to high heat for 8-10 minutes, stirring occasionally. 
  • Add salt, turmeric, chilli, garam masala, and coriander powder and mix well. 
  • Continue to cook without the lid for 8-10 minutes, stirring occasionally, till the potatoes are well done. Garnish with cilantro leaves and serve hot.
