Bhindi do Pyaza

This is a dish made with orka and onions and a lot of good spices. Goes well with roti and rice.

What you'll need..
  • 350 gm Bhindi chopped into pieces (Okra)
  • 1 Large onion cut in half and sliced thinly
  • 1/2 Tsp cumin seeds
  • 1/4 Tsp turmeric powder
  • 1/4 Tsp hing (asafoetida)
  • 1/2 Tsp chilli powder
  • 1 Tsp coriander powder
  • 1/2 Tsp Amchoor (Dry mango powder)
  • 1/2 Tsp Garam masala
  • 3 Tbsp oil
  • Salt to taste
How to..
  • Heat oil in a large non stick pan. Add the cumin seeds to it and wait for them to splutter.
  • Add the chopped okra and mix well. Cook for 5-6 minutes, stirring occasionally, till the okra gets a little tender. Don't worry about the sliminess. It disappears as the okra cooks.
  • Add onions, turmeric, hing, chill powder, coriander powder and mix well. Continue to cook for 8-10 minutes, stirring occasionally.
  • Add amchoor and garam masala and mix well. Cook for another 2-3 minutes then remove from heat and serve hot.
