This is a fast and easy recipe for breakfast which is a staple in Mumbai and made with flattened rice.

- 1 and 1/2 Cups Pohe (Flattened rice,thick variety)
- 1/2 Tsp mustard seeds
- 1/2 Tsp cumin seeds
- 1/4 Tsp turmeric powder
- 1/4 Tsp asafoetida (Hing)
- 1 Small onion chopped
- 1 Small potato boiled and cut into chunks
- 2 Green chillies chopped
- 2 Tbsp cilantro leaves chopped
- 1 Tbsp lemon juice
- 2 Tbsp oil
- Salt to taste
How to..
- Wash the pohe with water. Drain and set aside. The pohe should be moist but not mashed.
- Heat oil in a non stick pan. Add the mustard and cumin seeds to it and wait for them to splutter.
- Add the green chillies and asafoetida and fry for about 30 seconds.
- Add onions and cook for 4-5 minutes till they turn translucent. Then add the potato turmeric powder and salt and cook for another 2-3 minutes.
- Add the pohe and mix well. Cover with a lid and cook for 3-4 minutes.
- Mix in lemon juice and cilantro leaves. Garnish with nylon sev and serve hot.
