This is a very popular and one of my favorite Indian street food. It is a delicious and filling combination of two items, Aloo tikki and Ragda, both of which can also be enjoyed on their own.

- Aloo Tikkis
- 1 Can chickpeas (or dried white/green peas soaked over night and boiled)
- 1 Medium onion chopped
- 1 Large tomato chopped
- 1 Tbsp ginger-garlic-green chilli paste
- 1/2 Tsp turmeric powder
- 1 Tsp chilli powder
- 1 Tsp coriander powder
- 1 Tsp cumin powder
- 1 Tsp garam masala
- 1/4 Cup tamarind juice
- 1 Tbsp cilantro leaves chopped
- 1 Tbsp Nylon Sev
- 2 Tbsp oil
- Salt to taste
How to..
- Heat oil in a non stick pan.
- Add the ginger garlic chilli paste and fry for 12-15 seconds till it gets fragrant.
- Add the chopped onions and fry for 4-5 minutes till the onions get translucent.
- Now add the tomatoes, turmeric, chilli powder, coriander powder, cumin powder, garam masala and salt and mix well.
- Cover with a lid and cook on medium heat till the tomatoes get mushy.
- Add the canned chickpeas and tamarind juice and mix well. Cover and cook on low heat for 8-10 minutes. Mash some of the chickpeas with a potato masher to make the gravy thicker.
- Serve hot with the prepared Aloo tikki. Garnish with cilantro leaves, some chopped onion, cilantro chutney, tamarind chutney and nylon sev.
